Easy and Healthy: Chia Pudding with Raspberries and Dark Chocolate Recipe

If you're looking for a dessert that's easy, nutritious and tastes like an actualdessert, this chia pudding with raspberries and chocolate topping will surprise you. Few ingredients, zero refined sugar and a creamy texture with a crunchy touch – all in just a few minutes.

Ingredients

For the pudding:

  • 4 tablespoons of chia seeds
  • 1 pot of natural or Greek yogurt (unsweetened)
  • ½ cup frozen raspberries
  • 1 to 2 tablespoons of Barkers Raspberry Jelly (or 100% fruit jelly of your choice)

For the cover:

  • 80 to 100g dark chocolate (minimum 70% cocoa) – I used Whittaker's 86%
  • 1 tablespoon of coconut oil or cream (optional, to make the topping softer when cutting)

How to prepare

1. Prepare the chia base

Mix the yogurt with the chia seeds and raspberries (straight from the freezer). Stir well until the mixture is smooth. Leave to hydrate for 10 minutes. Add the raspberry jam on top of the yogurt.

2. Let it set

Refrigerate for at least 2 hours, or overnight. The pudding will become creamy and dense.

3. Melt the chocolate

Chop the chocolate and melt it in a bain-marie (or in the microwave at short intervals). If you like, add coconut oil or heavy cream for a smoother, shinier texture.

4. Assemble the dessert

Cover the pudding with the melted chocolate and spread carefully. Refrigerate again for 10 to 15 minutes or until the chocolate has set into a shell.

5. Serve

Break it with a spoon when serving and enjoy the mixture of textures: creaminess, acidity of the fruit and crunchiness of the chocolate.

Suggestions:

  • You can replace the jam with fresh fruit mashed with chia
  • For a vegan version, use vegetable yogurt
  • Looks great served in individual pots or dessert glasses
